Let’s Give It A Try

Late night snacks, we all love them and the next recipe is one I've been wanting to try that I figured would do well as an after dinner snack. In the episode "Rory's Dance" where this appears, Emily, the grandmother makes her daughter, Lorelai, a mashed banana on toast which she often did for her as a little girl whenever she was sick. I know it doesn't sound all that appetizing, and is apparently worse tasting to them than they thought it would be, but add some vanilla paste and cinnamon and it is honestly pretty good! The recipe calls for 1 ripe banana, juice of 1/2 lime (which I forgot, so I just excluded that), 1 teaspoon vanilla paste, 1/4 teaspoon cinnamon, and 2 pieces of whole wheat toast. I already had sourdough bread from a friend who made me some and I much prefer that anyway, so you can use whatever kind of bread you'd like. Just smash the banana with a fork, combine in a bowl with the cinnamon and vanilla paste, then spread on the toast slices. Voila! One of the easiest recipes there is to make. And it tastes a lot better than it looks. I would also recommend adding some fruit on the side, such as blueberries, a fruit high in antioxidants and great for your brain. Lastly, I paired it with my favorite cup of tea (ginger) and that is it! Two simpler recipes down, seventy-four to go (They'll look a lot more appetizing too as this journey of mine continues). On to the next one...
