Cookies For the Love and the Gals 🎶

With no time at all, this prodigal daughter has returned! I bet you're glad you didn’t have to wait a whole five months to be reunited with me, at least I assume so if you’re reading this. As you all are aware (or just don't care), Friday was Valentine’s Day. I attended a Galentine's party last night, so I decided it was the perfect time to start this journey and whip up something sweet to bring along, homemade peanut butter cookies with an almond butter substitute. Initially, I considered working through this cookbook front to back, but I realized it makes more sense to pick and choose the recipes based on how much time I have and which recipe is most relevant for that day. So, as far as this recipe goes, I started off by preheating the oven to 350°F and lining two baking sheets with parchment paper. Then, I combined 10 tablespoons of butter, 1/2 cup almond butter, 1/2 cup brown sugar, and 1 egg in a bowl and mixed it with a beater until smooth. I then added 2 cups all-purpose flour and beat it again until the dough came together and pulled away from the side of the bowl. After, I rolled the dough into 1-inch balls, flattened them on the cookie sheets and shaped them to look like peanuts. I used a fork to further flatten them and create the cross hatches. Finally, I baked them for 11 minutes and cooled them completely while I started on the filling. The filling consists of 1/2 cup almond butter and 2 tablespoons of powdered sugar which I blended together with a fork in a small bowl. I then placed a dollop of the filling on half of the cookies and used the other cookies as the top of the sandwiches, gently pressing them down. If you so desire, you can also put them in the fridge for about an hour to further harden the cookies. And that is it, a perfect snack for a small get-together!
